Salad with fresh green beans and feta cheese sauce

1 kg of fresh or frozen green beans

150 g feta

150 g milk

4 tbs of extra virgin olive oil KUKUZI

2 tbs fresh mint or spearmint

½ tsp oregano

150 g stale bread

1 clove of garlic

Salt and freshly ground pepper

Wash, clean and boil the beans in salted water for 5 minutes. To preserve their nice green color strain immediately and immerse in cold water with ice.

Stir in a multi mixer the bread with half of the olive oil, garlic, salt and pepper until it becomes crumb. Saute the mixture of bread in a pan for 6-7 minutes, stirring constantly until it changes color and becomes crispy.

Using the multi mixer stir the feta cheese with the milk, the remaining olive oil, the oregano, the mint and if needed add a little salt. This will make a nice, thick sauce.

To serve, place the beans in a serving dish, sprinkle the feta sauce, sprinkle the crispy grated bread and garnish with a few mint leaves.
