The humble fava is one of the most classic appetizers of our country. Over the last two decades we have neglected it, but in recent years it made a big comeback in the culinary spotlight. Pure, with onion or ‘married’ we can enjoy it in many ways and of course as a legume it is very healthy! I suggest you to try the famous greek varieties of Santorini or Feneos which are even more delicious.
I will give you a great recipe for beans with orange and I’m sure you will love it. It is a very simple implementation with few ingredients, as it contains onion, carrot and bay leaf that give it a great taste.

Wash the fava beans so you won’t need to remove the foam during boiling.
In a saucepan put the fava beans, the chopped vegetables, water, the orange zest, salt and boil with the lid over low heat for 40-45 minutes until it becomes mushy.
Every now and then stir to avoid sticking and during the last ten minutes remove the lid so get rid of the fluids.
Leave it for a short time to cool down and stir it in the blender with olive oil and orange juice.
Add a little pepper and more salt if needed.
Serve the fava beans as an appetizer with olive oil and lemon or as an accompaniment to grilled fish or pot octopus.
